Recipes - Jackruit Special

Jackfruit Kolumbu

1 raw mango
1 drumstick 
10 parboiled jackfruit seeds
1 1/2 cups small sized onions
1 tsp cumin seeds (jeera)
3 whole dry kashmiri red chillies
1/2 tsp black pepper (kalimirch) powder
3 tsp coriander (dhania) seeds
2 tsp chana dal (split Bengal gram)
1 tomato
1/4 cup grated coconut
1/4 tsp turmeric powder (haldi)
a small sized ball tamarind (imli)
salt to taste

For tempering:

oil as required
mustard seeds ( rai / sarson) , urad dal (split black lentils) as required
curry leaves (kadi patta) , coriander (dhania) leaves as required
1 green chilli, sliced
1/4 cup sliced onions

Method

Sauté onion,jeera,pepper,dhaniya,dry chilly,channa daal,little curry leaves together with oil till golden brown.

Add coconut and tomato(whole) ,mix once evenly.

Let it cool and grind to paste with turmeric powder.

In oil season mustard seeds,urad dal,curry leaves .

Add onion and green chilly,sauté it .

Add chopped mango and drumstick,peeled jack fruit seeds and sauté lightly.

Add grinded paste,salt,required water and cook well.

Add tamarind pulp ,coriander leaves and boil it till medium thick.

Masala Mustard Jackfruit

Ingredients

2 cups raw jackfruit, diced
1/2 tsp turmeric powder (haldi)
salt to taste

To be ground into a paste
1 tbsp mustard seeds ( rai / sarson)
4 whole dry kashmiri red chillies
1 tsp oil

Other ingredients

1 tsp mustard seeds ( rai / sarson)
1 tbsp urad dal (split black lentils)
1 whole dry kashmiri red chilli, broken
8 to 10 curry leaves (kadi patta)
1 tbsp oil

Method

Boil 2 cups of water, add the jackfruit, turmeric powder and salt and cook covered till the jackfruit is tender. Drain and discard the water.

Heat 1 tablespoon oil, add the mustard seeds and allow them to crackle.

Add the split black lentils, dry red chilli and curry leaves.

Add the cooked jackfruit, ground masala paste and cook for 4 to 5 minutes mixing well.

Serve hot.
