Ingredients:
- 1 cup almond milk
- 1 tbsp ground flax seeds
- 1/4 cup coconut oil (or vegetable/canola oil, I prefer coconut oil for its health benefits)
- 1/4 cup (slightly less) maple syrup
- 1 tsp vanilla extract
- 1/4 cup almond meal
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1+1/4 cup whole wheat pastry flour
- 1/2 tsp cardamom (optional)
- 1 tsp cinnamon
- 1+1/4 cup cooked quinoa
- Optional: Dried Fruit (Dates, Berries, etc)
Directions:
- Preheat Oven to 350F
- Whisk together almond milk & ground flaxseed and let sit for 1 minute
- Whisk in Oil, Maple Syrup & Vanilla Extract
- In a separate bowl, sift together flour(s), almond meal, baking soda, baking powder, salt and spices
- Add wet ingredients to dry, mixing until just incorporated
- Fold in the cooked quinoa and optional dried fruit
- Pour into a muffin tin (either oiled or with muffin cups)
- Bake for 18-20 minutes until a toothpick inserted into a center comes out clean
