Nirmala Garimella 01/24/2003 A Pot luck Favorite dish of mine Make a Paste Roast and grind Heat Oil in a Kadai. Wash and slit the green chillies and cut the eggplant in long strips. Fry in batches till brown and remove. In the same oil,add the mustard seeds,fenugreek seeds,curry leaf,onion seed.Now add the paste and fry for a while. Add the turmeric and coriander-cumin seed powder,chilli powder,and the dry powder masala. Cook till oil floats on top. Add two cups of water and the tamarind paste or juice and cook until thick. Now add the fried chillie and eggplant pieces,coriander and salt and cook for sometime. The gravy should be thick. Serve hot Enjoy with rice or chappaties !
