Kaddu Ki Sabzi

Ingredients

1/2 kg Kaddu (pumpkin/ ), peeled and cubed

1/2 tsp Turmeric Powder

2-3 Green Chilies, chopped

Salt to taste

1/4 tsp Garam Masala Powder

1/2 tsp Coriander Powder

1 tsp Sugar

1/2 tsp Amchoor (dried mango powder)

1/2 tsp Methi Dana (fenugreek seeds)

A pinch of Hing (asafetida)

1 tbsp Oil

 Method

 Heat oil in a pan and add methi dana and when it changes color, add hing, green chilies and sauté for 1 minute.Now add kaddu pieces, turmeric, coriander powders, and salt and mix it well. Add 1 tsp water and cook on a lower heat till kaddu turns tender.Add sugar, amchoor and garam masala powder and mix well. Cook on low heat for 2 minutes and continue cooking till all the water evaporates

 Pumpkin Pickle Recipe

 Ingredients:

• ½ Kg Pumpkin

• 1 Cup Mustard Oil

• ½ Cup Salt

• 3 Tsp Mustard Powder

• 1 Tsp Turmeric

• 2 Tsp Fenugreek Seeds

• 2 Tsp Red Chili Pepper

Method:

• Cut the pumpkin along with skin into long slices.

• Place it in hot water for 15 minutes.

• Drain the water and allow it to cool.

• Heat the oil, cool it and mix all the Ingredients: to it.

• Rub this mixture on the pumpkin pieces.

• Place this pickle in a clean jar and keep shaking it at least once in a day.

• Use it after 3 days.

 

 Pumpkin Curry

 Ingredients

Pumpkin (Yellow) - 1 lb
Onions - 2
Tomatoes - 2
Green Chillies - 2
Sugar - 1 tsp.
Red chilli powder - 1 tsp
Grated coconut - 1/4 cup
Salt - to taste
Chopped cliantro

 Method :
Chop onions, Green Chillies and tomatoes finely. Cut the pumpkin into medium size pieces. Heat tawa add mustard seeds, when it splutter add Bengal gram dhal and Urad Dal. Add onions and sauté till it becomes soft and add tomatoes. Add  pumpkin and fry then add salt, sugar, red chilli powder and fry it well. Sprinkle some water and allow the pumpkin to cook until it becomes soft. Add grated coconut at the end and garnish with cilantro.

Pumpkin Kheer or pudding

Ingredients:

Red Pumpkin – 1 small sized
Sugar – 1 and 1/2 cup
Milk – 1/2 ltr
Cashew – 5-6
Cardamom – 1
Kesar strands – 4-5 (optional)

Method:

Peel the Pumpkin; cut it into small pieces. Cook it with 1/4 cup of water in pressure cooker or you can cook in Microwave for about 8 min.

Grind the cooked Pumpkin in a mixer grinder with Cashews and Cardamom and prepare a smooth paste.

Transfer the Pumpkin paste into a heating vessel on low flame. Add boiled milk and Sugar to it and stir well for 10 min. Remove from the flame.

Garnish with Kesar strands and grated or cut Cashew pieces.
