Marinated Tofu Kebabs
Kebabs
1 block firm tofu
mushrooms, sliced
green peppers, cut into
large chunks
Red onion, cut into
large chunks
zucchini, cut into large
chunks
kebab sticks
Marinade
2 tbsp apple cider
vinegar
1/2 lime (or
lemon), juiced
tamari (or soy sauce)
olive oil
fresh garlic, finely
chopped or minced
sesame seeds
Method:
Chop tofu into large chunks and place in a container
with a sealable lid. Mix all marinade
ingredients in a bowl and pour
mixture over the tofu. Seal container and shake. Leave for an hour
or more (overnight is good) Take kebab
sticks and soak in water for ten minutes.Place tofu and vegetables alternately
(each color alternating is attractive) onto the kebab sticks and
continue until all ingredients are used. Baste with olive oil and place
onto the BBQ, turning when each side is cooked.
Spicy Kofta Burgers
A delicious, simple spicy mix which is great served either
in flat bread wraps or warmed pita breads with a cooling yoghurt, mint and
cucumber dressing.
Ingredients
1 small onion, finely chopped
2 garlic cloves, finely chopped
500g minced beef
2 tbsp curry paste
large bunch fresh mint, finely chopped
salt and freshly ground black pepper
Method
1. Combine all the ingredients in a large bowl and mix until well blended.
2. Shape the mixture into 4 burgers and chill until ready to barbecue.
3. Cook the burgers close to the coals for 3 minutes per side for rare or
longer for medium to well done. Serve immediately.
Grilled Couscous Patties:
2dl couscous 150g feta, crumbled finely
Sundried tomatoes, chopped finely
1/2 red onion, chopped finely
1 egg
Breadcrumbs (to improve stickiness, also cream cheese /creme fraiche might help)
Salt, pepper, fresh rosemary),
olive oil for the
grill
Method
Cook the couscous according to the instructions. (for most that means to add
boiling water/stock, salt and oil/butter and let it steam). Cool it.
Mix all the ingredients together in a big bowl. With wet hands, form patties
and brush them with olive oil. Barbecue.
