Compiled by Nirmala Garimella 06/13/2005 Aam Lassi Ingredients : 1 cup Diced fresh mango 1/2 cup Orange juice, chilled 3 tbl Clear honey 2 cup Rich milk, chilled 1 pch Garden rose petals, optional Method : Combine mango, orange juice & sweetener in food processor. Blend for 1 1/2 minutes. Pour milk into processor & process till it has expanded & become frothy. Add the mango puree. Process for about 1 minute. Pour into chilled glasses. Garnish with the rose petals if so desired. Serve immediately. Grape Sherbet Ingredients : 225 gm Grapes, green, seedless 3 tbl Castor sugar, finely ground granulated sugar 1/2 tsp -Pepper, ground 1 tsp Cumin seeds, roasted & ground 1/2 tsp -Salt 2 tsp Lemon juice 3 cup -Water, chilled, 750 ml Mint, fresh, few sprigs Method : Wash grapes and crush them thoroughly. Pour in water. Mix well. Strain through a sieve. Add all the seasonings. Mix well. Chill.Serve, garnished with mint leaves. Peach Surprize Ingredients :- 2 Peaches, peeled and sliced 1/4 c Instant dry milk powder 1/4 c Peach nectar 4 Ice cubes 1/2 tsp Vanilla extract Combine peaches, milk powder, peach nectar, ice cubes and vanilla extract in a blender. Process until smooth. This would probably be good using apricots and apricot necture in place of the peaches. Pomegranate Drink 3 cups fresh pomegranate juice 1/2 cup fresh lemon juice 1 teaspoon orange blossom water sugar to taste a pinch of salt seltzer or water, to taste, and ice cubes Combine everything in a blender, or mix well in a pitcher and serve with ice cubes. Carrot-Pineapple Juice 1 large carrot, shredded (about 3/4 cup) 1 cup water 1 can (8 oz., 227 g) crushed pineapple in juice 1/2 cup crushed ice (or 1 cup whole ice cubes) In a blender at medium speed blend carrots and water for about 1 minute. Strain through a fine sieve or clean kitchen towel and return liquid to blender. Add pineapple (along with juice) and ice and blend at medium speed until smooth. Creamy Coffee Ingredients: 1 1/2 quarts brewed coffee, room temperature 1 cup milk 1 cup half-and-half cream 1/3 cup white sugar 1 teaspoon vanilla extract In a pitcher, combine cooled coffee, milk and half-and-half.
