Diabetes-Friendly Quinoa Veggie Salad

Quinoa is a gluten free grain, which makes it ideal for diabetics. This healthy salad can be enjoyed as a main course or a side dish.  You can also use Couscous, Moriya, and Amaranth instead of Quinoa.

 

Text Box:  Ingredients
½ cup Quinoa
1 cup Water
1 large head of Lettuce, chopped
2 cups Arugula or spinach
1 cup Cucumber, diced
1 Apple, chopped
¼ cup Paneer cheese

 

Dressing
2 tbs. lemon juice
2 tbs. Sesame/Peanut/Olive oil
1/2 tsp. salt
1/4 tsp. white pepper
1/4 tsp. mustard powder (optional)
Some fresh chopped Dhaniya/Coriander or Pinch of oregano or to sprinkle

 

Directions  

  1. Cook quinoa in a pan with 1 cup boiling water for 10–15 minutes until it is cooked. Strain any excess water and allow it to cool.
  2. Mix all the dressing ingredients together in a bowl.
  3. Pour on dressing, lettuce, Arugula, cucumber, apple, and cooked quinoa and mix well.
  4. Sprinkle Paneer cheese and Dhaniya/oregano before serving.

 

Serves approximately four people.
