For the rice

  • 2 cups short grain rice cooked

For The Beans

  • 15 oz can red kidney beans or rajma
  • 1 cup bell pepper finely diced
  • 1 tbsp jalapeño finely diced
  • 2 tbsp cilantro finely chopped
  • 2 tsp lime juice
  • ½ tsp salt

For Salsa

  • 2 cup tomatoes chopped
  • ¼ cup cilantro chopped
  • 1 jalapeño chopped
  • ½ tsp salt
  • ½ tsp cumin seed powder

For Serving

  • 1 ½ cup lettuce thinly sliced
  • 1 jalapeño thinly sliced
  • ¼ cup shredded Mexican blended cheeses cheddar or grated Paneer
  • 1 cup Guacamole or 1 cup grated paneer

Method

Make Rajma the way you would in Indian style with tomatoes, onions, and garam masala. Make the salsa by blending the ingredients. Cook the rice with one tablespoon of salsa to give it a flavor.

Assembling

Spread lettuce in the bowl, layer with the bean and rice mix, add cheese or grated paneer and some taco sauce. Top it with Guacamole or Avocado slices
