Mango Kesari Baath/Mango Sheera/Mango Halwa

Text Box:  Mango Kesari Baath/Mango Sheera/Mango Halwa is a delicious sweet dessert made with mangoes. As mangoes are in season now I wanted to make Mango Kesari Baath with fresh mango pulp. It tastes very nice with Mango flavor and the vibrant natural color of the fresh Alphonso Mango pulp gives the Kesari Baath a true compliment.

 

Ingredients:

·      1/2 cup Sooji/ Rava  

·      1/2 cup  fresh Mango pulp  

·      1 and 1/2 cup milk/water  

·      1 tsp Cardamom powder 

·      1/2 cup Sugar  

·      3-4 tbsp. Ghee  

·      Cashew nuts few

·      Salt  a pinch 

 

Method:

·       In a pan add 1 tbsp of ghee and roast the cashew nuts. Keep them aside.

·       In the same pan add 1 more tbsp. of ghee and roast Sooji until it turns slight golden color. Be careful not to burn this. Add the pinch of salt. For any sweets, adding a pinch of salt brings out a best taste.

·       Boil the milk/water and add it to the roasted Sooji.

·       Be careful as it may splutter. Better, switch off the gas and add hot milk/water.

·       Do not worry if the mixture is watery, the Sooji will absorb the milk/water once it is completely cooked.

·       Keep the flame low. Let the Sooji is cooked completely.

·       Add sugar to this. Mix well. It will again loosen up. After few minutes, it will be ok.

·       Keep cooking it on a low flame.

·       Add cardamom powder to this.

·       Add 1 - 2 tbsp of ghee to this.

·       Add the fresh Mango pulp to this..

·       Mix well. My mango pulp was slightly coarsely ground and so I could find Mango bits in the Kesari.

·       Mix well evenly.  Cook for 2 minutes in low flame. Add few more tsp of ghee to give a nice glaze.

·       Add the roasted cashew nuts. And serve warm or hot.

 

Notes:

1.     Instead of milk, you can add water.

2.     Always use fresh Mango pulp for best results.

3.     The Kesari will not be curdled after adding the mango pulp, so do not worry.

4.     You can add fresh mango bits to the Kesari while cooking the Sooji with milk.

5.     I used alphonso mangoes, you can use any variety of mango for this mango Sheera / Mango Kesari.
