Protein packed Corn baked patties
Ingredients
1 cup crushed sweetcorn kernels
1 cup rice
1/2 cup split pigeon peas
1/4 cup moong dal
2 tbp split urad dal
1/2 cup sour yoghurt
4 tsp sugar
2 tsps red chillie powder
1/2 tsp turmeric powder
1 large onion chopped
2 tbsp chopped cilantro
3 green chillies chopped
4 tbsp oil
2 dried red chillies
1 bay leaf
1 tsp mustard seeds
1 tsp sesame seeds
1 tbsp lemon juice
Method
Soak the rice with the dals in 5 cups of water overnight or for 4 hours. Drain and ground to a coarse paste and add water to make a thick batter. Mix in the yoghurt and cover the batter for 3 hours for fermentation.
Add the corn, salt, sugar,chillie powder, turmeric, onion, chopped cilantro and green chillies to the batter and mix well.
Preheat oven to 400 degrees F. Heat the oil , add red chilies, bay leaf and mustard seeds and sesame seeds.
Pour the lemon juice in the batter and the hot seasoning and whisk. Grease a 8X8 baking pan and pour the batter half full . Take a larger tray and fill with water and place the batter tray in it. Bake in a preheated oven for 25 minutes. Cut into wedges and and serve hot
