08/18/2022 The Meditative soup 1 1/2 cup cooked chickpeas - Soak 3/4 cup raw chickpeas at least 3/12 hours before soup time and cook in a slow crockpot for 1 1/2 hours. 2-4 tbsp olive oil 2 cups chopped white onion 2 cloves crushed garlic 2 cups chopped sweet potatoes or winter squash 1/2 cup chopped celery 1 cup canned tomatoes 3/4 cup chopped sweet peppers 3 cups stock water 2 tsp paprika 1 tsp turmeric 1 tsp basil 1 tsp salt dash of cinnamon dash of cayenne 1 bay leaf 1 tbsp tamari In a soup kettle or a large saucepan, saute onions, garlic, celery and sweet potatoes in olive oil for 5 minutes. Add seasonings, except the tamari and the stock or water. Summer uncovered for 15 minutes. Add remaining vegetables and chickpeas. Simmer till tender for another 10 minutes.
