Ingredients
2 medium onions
3 garlic cloves
2 medium green peppers
1 medium carrot
2 medium tomatoes
2 cups kidney beans
2 tsp oil
2 tsp red chilli powder
1 tsp cumin powder
For the Pie Crust
2 cups maize flour
1/2 whole wheat flour
2 tsp baking powder
1/2 cup water
1 tsp oil
salt
Method
Peel and finely chop the onions and garlic. Wash the capsicums, peel carrots and finely chop. Puree the tomatoes.
Soak the beans overnight and pressure cook them or you can use canned beans .
Mix all the pie crust ingredients and knead into a smooth dough using water. Grease a 9X12 baking dish and spread half the dough in the bottom.
Keep the remaining dough to spread on top of the filling
Preheat oven to 400 degrees F.
In a frying pan, add chopped onion, garlic and once they are slightly brown, add carrot, peppers, kidney beans, pureed tomatoes, chillie powder, cumin powder. cook till the vegetables are tender.
Pour the vegetables on the pie dish, line the rest of the dough after rolling it out so it covers the filling and press the edges,
Bake in the oven for 35 to 40 minutes, Till golden brown
