Mexican Lime soup

1 Kg Pumpkin
30ml olive oil
10gm garlic
40gm onion
1 tsp cinnamon powder
1 tsp clove poweder
1 ltr skim milk
1 tsp parsley chopped
salt and pepper to taste
Method
Clean and cut the pumpkin into small cubes, Heat oil and saute onion and garlic. Add the pumpkin cubes and saute for 2 minues. Add clove and cinnamon powder. Mix well and transfer into a heated oven. Roast for 5 minutes at 350F. Add milk and roast again for 10 minutes. Add seasoning. Remove, cool and make it into a puree. Garnish with chopped parsley.
Bean and Potato Hungarian style soup
30gm oil/butter
30gms onion chopped
5 gms garlic chopped
1/2 tsp paprika
200gms potatoes cut into cubes
300 gms french beans cut into pieces
1/2 tsp roasted cumin powder
300ml tomato puree
1 lemon
1 lts stock
salt and pepper
Heat oil/butter add chopped onion and garlic. Add potato and red chilli powder . Add tomato puree, vegetable stock and cook until potato is done. Adjust thickening with roux. Add french beans and cook for anotehr 5 mintues. Finish with lemon juice and salt, pepper and roasted cumin powder.
To make the roux melt 1 tbsp butter and roast 1 tbsp flour on low heat. Add a little water to make the sauce stirring all the time to prevent lumps.
