Dates Pickle

 Ingredients:  

Dates  500 gms 

Ginger: 50 gms

Curry leaves : 2 sprigs

Chilly powder: 10 gms

Turmeric powder: 5 gms

 Mustard seeds : 2 gms

Fenugreek powder: 2 gms

Asafetida -1 gm

Sugar 100 gms

 Honey : 50 gms

 Gingelly oil   : 50 ml

 Method:

Clean, wash and remove the seed of dates and cut it in to thin pieces. Cut the ginger & into straight thin pieces. Make syrup with sugar and water. Heat oil in the pan and crackle the mustard seeds. Add & sauté the ginger with curry leaves. Add the turmeric powder, chilly powder, asafetida powder and fenugreek powder. Add dates and pour the sugar syrup with honey. Cook it for few minutes. Let it cool. 


Bitter gourd Pickle

Ingredients: 

 Bitter gourds   :  250 gms

2. Garlic    : 10 gms

3. Ginger    : 10 gms

4. Green chilly   : 10 gms

5. Curry leaves 

 : 2 sprigs

 6. Chilly powder   :

20 gms

7. Turmeric powder   : 5 gms

 8. Mustard seeds   : 2 gms

 9. Fenugreek powder   : 2 gms

 10. Asafetida    : 1 gm

11. Sugar    : 5 gms

12. Gingely oil  : 25 ml

13. Vinegar    : 100 ml 

14. Salt : To taste

 

Method:

Clean, wash and remove the seed of bitter guard and cut it in to thin pieces. Cut the ginger & garlic into straight thin pieces. Heat oil in the pan and crackle the mustard seeds. Add & sauté the ginger, garlic, green chilly & curry leaves. Add the bitter guard and sauté well. Add the turmeric powder, chilly powder, asafetida powder and fenugreek powder. Pour the vinegar and cook it for few minutes. Season with salt and sugar. Let it cool.
