Recently I was asked by some millenials the easy and simple South India recipes
Upma
Ingredients:
1 cup Suji(semolina)
1 onion
1 potato -
3 green chilies - 3
Ginger - 1" inch long
5 Curry leaves
1 tsp Mustard seeds
1 tsp Urad dal
1 tsp Chana Dal
4 tbsp oil
1 tsp salt
1 tbs Ghee
21/2 cups water
Chop onions, potato and green chillies. Peel the skin of ginger and chop it also into small pieces.Heat oil in a pan and add mustard seeds, urad and chana dalOnce they splutter and change their color add chopped green chillies and ginger. Add curry leaves and the chopped potato and onion.Saute it till the onions become translucent and add salt. Add water and bring it to boil. Once the water come to a rolling boil, add suji stirring continuously. We have to be careful while adding suji as it is tend to form lumps, if we do not stir it properly.
Allow this to cook for 5 minutes.Once it is cooked completely add ghee and one tbsp of oil to it and mix it well
Garnish with Cashews fried in ghee. As a variation you can use any vegetables of your choice besides onions and potatoes
Dosa
Ingredients:
Black Gram / Urad Dal - 1 cup
Rice - 1 1/2 cups ( I use a combiantion of white and brown rice)
Fenugreek Seeds - 1/2 tbsp
Salt - to taste
Procedure:
Wash and soak black gram, rice and fenugreek seeds for 4 hours or overnight.We can soak them separately or combining.
Grind them altogether to make a smooth batter. The wet grinder are best but you can use any mixie too.While grinding add little water, approximately 1/2 cup to 1 cup.
Mix it while grinding. Use a plastic spatula to mix it.
Grind it till we get bubbles in the batter. Remove add salt and keep it for fermentation. This may take overnight or a 4 to 5 hours. The dough will rise. Store in the refrigerator.
Heat dosa pan, sprinkle some water to check hotness of the pan.
Spread a ladle full of batter in circular motion on it.Pour one teaspoon full oil on it. Cook till it gets light brown color.
Flip it and cook on the other side.
