A Syrian Christian preparation of Chicken with coconut milk (  Flavored with coriander.)

 

Ingredients:

 1. Chicken - 250 gms 

2. Coconut oil  -30 ml

3. Onion slices -100 gms 

4. Garlic slices  -5 gms

5. Ginger julienne  -5 gms 

6. Green chilly  -5 gms

7. Curry leaves - 1 spring

8. Turmeric powder - 1 gm

9. Coriander powder  -10 gms

10. Garam masala  - 5 gms

11. Fennel powder - 3 gms

12. Salt to taste

 13. Coconut milk    : 150 ml

 

For tempering: 1. Coconut oil -15 ml

 2. Mustard seeds - 2 gms

3. Shallots(sliced) - 10 gms

4. Curry leaves - 1 spring

 

METHOD:- Clean the chicken and cut it in to cubes. Heat the coconut oil in a pan & sauté onions, ginger, garlic, green chilly & curry leaves till light brown in colour. Add turmeric powder, coriander powder, fennel powder and garam masala. Sauté it and add the chicken cubes and salt with little hot water. Allow it to cook well. Finish with coconut milk.

 

For tempering heat the oil in a pan & crackle the mustard seeds. Add and sauté the shallots & curry leaves till golden brown in colour. Garnish with tempering.
