Chinese Dimsum
For the Wrappers
30 circular wanton wrappers
For the filling
2 cups mixed vegetables ( cabbage, leeks, spinach, carrot)
1 cup raw shrimp,and minced tofu
3 sprigs coriander
3 cloves garlic chopped fine
10 whole peppercorns
1 onion, finely chopped
6 water chestnuts finely chopped
1 tbslp cornstarch
1 tbsp sugar
1 tsp fish saucec
1 tsp soy sauce
for the garnish
2 tbsp freshly chopped garlic
1 tbsp sesame oil
for the dipping sauce
1/2 cup red rice vinegar
1/2 cup soy sauce
2 cloves fresh garlic
2 tblsp fresh ginger
1 green onion
Method
For the filling
Mash Coriander, garlic cloves, and peppercorns in a mortar and pestle.
Combine with the rest of the filling ingredients.
To stuff the dumplings
working with one wrapper at a time,place about one tbsp at the center. Wet the edges of the wrapper
and fold in half to make a half moon shape. Pleat and crimp the edges together for a good seal.
Steam the dumplings in a bamboo steamer or in an idli steamer too. For the garnish, stir fry garlic and sesame oil and brush over the dumplings
Combine all the sauce ingredients and serve with dumplings
