Recipes - Vegan Cookies

Ingredients:
  • 1 cup almond milk
  • 1 tbsp ground flax seeds
  • 1/4 cup coconut oil (or vegetable/canola oil, I prefer coconut oil for its health benefits) 
  • 1/4 cup (slightly less) maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup almond meal
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1+1/4 cup whole wheat pastry flour 
  • 1/2 tsp cardamom (optional)
  • 1 tsp cinnamon
  • 1+1/4 cup cooked quinoa
  • Optional: Dried Fruit (Dates, Berries, etc) 
Directions:
  • Preheat Oven to 350F
  • Whisk together almond milk & ground flaxseed and let sit for 1 minute
  • Whisk in Oil, Maple Syrup & Vanilla Extract
  • In a separate bowl, sift together flour(s), almond meal, baking soda, baking powder, salt and spices
  • Add wet ingredients to dry, mixing until just incorporated
  • Fold in the cooked quinoa and optional dried fruit
  • Pour into a muffin tin (either oiled or with muffin cups)
  • Bake for 18-20 minutes until a toothpick inserted into a center comes out clean
